The Complete Guide to Cooking on a Kamado Grill with Charcoal

If you've bought a kamado grill, choosing the right kamado charcoal is the single biggest thing you can do to improve your cooking. These ceramic cookers are brilliant at holding steady temperatures for hours, but only if they're fed clean, dense fuel. This guide covers what to buy, how to light and control your kamado, and how to get the best from it, whether you're in Longton, Stoke-on-Trent or anywhere else in Staffordshire.

Why Kamados Need Good Charcoal

A kamado's thick ceramic walls and tight-fitting vents mean it uses very little fuel compared with a standard barbecue. That efficiency is a gift, but it also means poor charcoal shows up quickly. Cheap, dusty or damp charcoal produces acrid smoke, lots of ash that clogs the airflow, and temperatures that wander up and down.

Good lumpwood charcoal is made from real hardwood, burns hot and clean, and leaves very little ash. Large, even lumps also allow air to move through the firebox, which is the key to stable temperatures. When you're picking a bag, look for:

  • Large, varied lumps with few small pieces or dust at the bottom of the bag.
  • Hardwood only, with no chemical additives or lighter fluid.
  • Dry, well-sealed packaging, because damp charcoal is hard to light and burns unevenly.
  • Low ash content, which keeps airflow clear on long cooks.

Lighting and Temperature Control

The most common kamado mistake is lighting too much charcoal and overshooting your target. Ceramic holds heat for a long time, so it's far easier to climb slowly than to bring a hot kamado back down. Follow these steps:

  1. Clear the old ash from the firebox and make sure the air holes are open.
  2. Fill the firebox with fresh lumpwood, topping up over any remaining good charcoal.
  3. Light just one or two spots in the centre using natural firelighters, not lighter fluid.
  4. Leave the lid open for around ten minutes while the fire establishes.
  5. Close the lid, keep the bottom vent open and the top vent about half open, then fine-tune as you approach your target.

Aim to close the vents down a little before you reach your desired temperature. As a rough guide, small vent openings suit low-and-slow cooking around 110 to 120 degrees, while wider openings give you the 250 degrees and above for steaks and pizza.

What to Cook and How

A kamado is one of the most versatile cookers you can own. For low-and-slow jobs such as pulled pork, brisket or ribs, keep the temperature steady and resist the urge to open the lid, as every peek costs heat and time. For hot and fast cooking, such as steaks, burgers or flatbreads, open the vents, let the temperature climb and sear directly over the coals.

You can also add a few chunks of cooking wood alongside your charcoal for extra flavour. Place them on top of the lit charcoal rather than underneath, so the smoke arrives gradually through the cook.

Looking After Your Charcoal and Your Kamado

Store your charcoal somewhere dry, ideally off the floor and with the bag folded or sealed. Before each cook, shake out the ash and any tiny pieces so air can flow freely. Unused charcoal from a previous cook can be reused, which keeps costs down and makes the most of every bag.
